A Sweet Take on a Classic.
A delicious twist on a classic Eastern Mediterranean dish. We roast carrots and red onions until they're sweet and velvety, and mix them with aromatic parsley and scallions, chewy quinoa and tart red wine vinegar for a flavorful and satisfying entree.​ 
What do I do with this?
It's good hot or cold, below are a few of our favorite serving ideas:
  • By itself for lunch, as a snack or as a light dinner
  • Shared as a side next to your favorite protein (grilled tofu, chicken and fish are all great)
  • Alongside hummus and flatbread or on top of some avocado toast
