Deeply Satisfying French Vegetable Stew
Starting with an aromatic base of sauteed onion and garlic, we add eggplant, zucchini and bell peppers, and slowly stew everything together to make our rich and savory ratatouille.
What do I do with this?
Best eaten hot, below are a few of our favorite serving ideas:
  • Have on top of a grain (we love it with rice, barley and quinoa), a noodle or with your favorite crusty bread
  • Shared as a side next to your favorite protein (grilled tofu, chicken, fish and steak are all great)
  • As part of a savory breakfast with a fried or poached egg; or better yet, defrost ratatouille in microwave, bring to a simmer on the stove on a small pan, make a well in the pan and drop in an egg to poach in the ratatouille - shakshouka style.
